Rice pudding is the business when it comes to winter puds. Actually I made this super early in the morning on a cold day and I have to say temptation got the better of me and I ate it up for breakfast!
Rather an odd breakfast I know but it was so yummy and warming and set me off really nicely for my morning walk.

Oat milk rice pudding
Having a vegan daughter means I always try my hand at making a dish vegan so we can all eat together and I found this one worked particularly well. My daughters dairy free milk of choice is always oat so that is what I chose to use. I suggest you experiment with your rices, your dairy-free milks and even the sugars you use, maybe pure syrup or rosehip or a mix or just sugar on it’s own. You can’t go far wrong.
Basically a rice pudding is simply cooked rice in sweet hot milk /milk substitute.

750 ml Oat milk
4 tbsp of Sugar / maple syrup
150 g short grain /pudding Rice
Toppings
Maple Syrup to swirl on top
Raspberry Jam

- 150 g pudding rice
- 375 ml semi skimmed milk
- 2 tbsp sugar

- Place the rice, milk and sugar (or syrup) in a large saucepan.

Bring to the boil then simmer slowly for 30 – 40 minutes, stirring regularly till milk absorbed and rice soft

Serve with jam and a swirl of syrup
