What is Arroz con Leche?
Have you heard of this dish? Possibly not if you are in the UK. Arroz con Leche is essentially Spanish rice pudding and it differs only slightly from our UK version ( but in such a good way) It is the addition of cinnamon and citrus that distinguishes this dish form its English / American counterpart.
There are many versions of Arroz con Leche you can use evaporated milk or even eggs in your mix but we are going purely vegan and omitting these. Don’t worry though it still tastes absolutely authentic and totally delicious.
Vegan Arroz Con Leche – ingredients
400ml 0at milk
250g pre-cooked white rice
1 cinnamon stick
2 pieces orange peel
2 pieces lemon peel
1 tsp cinnamon plus more for dusting
50 g sugar
Handful of juicy golden raisins
Arroz Con Leche – method

Add the plant milk cinnamon and fruit peels to the precooked rice

Simmer for 15 minutes constantly stirring.

Stir in the sugar and keep simmering till it dissolves and rice is creamy
- Throw in your raising and stir well
- Serve hot or leave in fridge to cool and set
- Dust with cinnamon prior to serving.
