Vegan Mexican Buddha Bowl

I want to show you today how to create a vegan Mexican Buddha bowl. Now there are so many things I like about this dish but the main one I suppose is how packed with taste it is. People very often wrongly assume vegan food is tasteless but oh my goodness it really does not have to be.

And Mexican food well … it’s defining features are beans and spice and so our vegan Mexican Buddha bowl is plant powered, exiting, super tasty and full of goodness.

Back to our recipe now and what’s a Buddha bowl I hear you ask. Let me tell you a bit about Buddha bowls.

‘A Buddha bowl is a vegetarian meal, served on a single bowl or high-rimmed plate, which consists of small portions of several foods, served cold. These may include whole grains such as quinoa or brown rice, plant proteins such as chickpeas or tofu, and vegetables’ (source)

This is a lovely way to eat a variety of food and the name is said to be derived form the fact Buddha means balance and this is a balanced plate of food. Alternately it could be called a Buddha bowl because of the story of Buddha carrying his food bowl to fill it with whatever bits of vegetarian food villagers would offer him.

I love both ideas!

In a Buddha bowl the food is not mixed up but artistically arranged and they truly are bowls of beauty.

  • Red onions finely chopped
  • Cherry tomatoes
  • Spinach
  • Homemade Salsa
  • Avocado
  • Roasted peppers in fajita seasoning
  • Jalapenos
  • Hummus
  • Sesame seeds
  • Wholegrain rice and quinoa

I make this dish just prior to it being eaten so the leaves and tomatoes are super fresh. I tend to put all the ingredients out in little bowls so everyone can make their own according tho their likes / dislikes. It is a winner with my family.
