Easy Slimming World Veggie Chilli
This is a yummy syn free veggie chilli and speedy and easy to make. YOu probably have what you need in your store cupboard already and their is minimal prep or effort involved. And it only uses one pan which is always a bonus in my book!
I have used powdered chilli and garlic to save time/effort but obviusly you can use fresh if you like. This freezes really well so do double batch your cooking for a speedy lunch another day.
Simple and scrumptious and verstaile.
The perfect dish.
1 chopped red onion
250g Quorn mince
I tsp chilli powder
1 tsp garlic powder
1 orange pepper, chopped into small cubes
I carton of Passata
400g red kidney beans
1 tbsp tomato puree
1 tsp cumin
Salt & pepper
Spray a large frying pan with Fry Light & fry the onion, garlic, chilli & cumin until the onions go soft
Next add the Quorn mince cook for 5 mins until unfrozen
Add passata, kidney beans, salt & pepper then simmer on a low heat until piping hot.
Serve with brown basmati rice or baked potato and fresh green salad.
