Easy Strawberry and Rose Syllabub

Strawberry and Rose Syllabub is a classic!

In the run up to one of the world’s premier tennis tournaments, Wimbledon, many fans will be getting ready to indulge in the event’s signature dish: strawberries and cream. So, for those looking for some inspiration for food to serve whilst watching Wimbledon, Ocado has compiled five delicious dessert recipes based on these two core ingredients.

The classic combo of strawberries and cream is given a sweet, floral and slightly boozy twist in this super-simple Strawberry and Rose Syllabub – perfect for chilling out and watching the tennis.

 

Strawberry and Rose Syllabub

Ingredients for Strawberry and Rose Syllabub

  • 400g strawberries, hulled and quartered
  • 4 tbsp rosé wine
  • 3 tbsp caster sugar
  • 1 tsp rose water
  • 150ml double cream
  • 4 vanilla shortbread biscuits

 

Method for Strawberry and Rose Syllabub

  1. Put the strawberries in a bowl with the wine, sugar and rose water. Mix well and leave to macerate for 45 mins.
  2. Scoop most of the fruit into 4 dessert dishes, setting aside a few pieces for decorating. Pour the steeping juices into a separate clean bowl with the double cream and whisk to soft peaks.
  3. Spoon the cream over the dishes of strawberries, then top with the remaining strawberries and a shortbread biscuit. Serve immediately.
  4. Allow an extra 45 mins for macerating the strawberries.
