JAMROCK: A Barbadian Rum Cocktail by Michal Golecki, Head Mixologist at Studio Bar
Head Mixologist Michal Golecki shares his recipe for the exclusive JAMROCK cocktail available at Studio Bar this Spring, the stylish bar within K West Hotel & Spa in Shepherd’s Bush.
A cocktail as colourful as the Caribbean.
JAMROCK was named in honour of the legend. Formerly the BBC Building Kensington House in the 70s and 80s, an endless list of Rock ‘N’ Roll royalty has stayed, played and misbehaved at K West – including Bob Marley himself. K West is recreating that Marley magic using Doorly’s XO Rum, a well-aged character, double matured in Spanish oloroso sherry casks.
JAMROCK Barbadian Rum Cocktail
25 ml Doorly’s XO Rum
12.5ml MB Banana liqueur
12.5ml Malibu
12.5ml Mozart Chocolate liqueur
3 Muddled Maraschino cherries
25ml Passion fruit purée
Passion fruit and seeds
Sprig of fresh mint
Step 1: Muddle the Maraschino cherries in a cocktail shaker to get the full flavour out.
Step 2: Pour the rum, MB Banana liqueur, Malibu, MB Chocolate liqueur and passion fruit purée to the shaker, along with some ice.
Step 2: Shake, shake, shake (for at least 12 seconds).
Step 3: Pour over crushed ice in your favourite glass, or a copper tin mug if you really want to drink like a local.
Step 4: Cut the passion fruit in half and use the seeds of one half and a sprig of fresh mint to garnish the drink.
Step 5: Bottoms up!
Michal’s expert tip: “To kick it up a notch, fill up the empty passion fruit half with Sambuca and flame the fruit with a lighter. Pour Sambuca on top of the cocktail as you serve.”
