Sometimes we just crave home comforts like mac and cheese – and it couldn’t be simpler when you make it in a microwave. You could get a steaming pot of cheesy goodness in around 15 minutes.

There are many different microwaves on the market, with different settings and levels at their disposal. For the perfect mac and cheese, it can be a good idea to try out a few different recipes to see which one works the best in your particular microwave.

 

Poached Salmon and New Potatoes

Did you know that you can poach salmon in the microwave? You can find an excellent recipe for poached salmon with a cucumber sauce, here. Serve with buttered new potatoes, which take around 6 mins in the microwave, depending on size.

 

 Frittata

Forget boring old omelettes and the tiresome pan cleaning afterwards. With 4 large eggs, some cheese, leftover veggies and cooked meat, you can make a tasty frittata. Simply chop, whisk, and mix all your ingredients, and mix on just under ¾ power for around 8 mins.

The first of BBC’s Good Food microwave recipes on this list serves 2 people for a quick mid-week treat.

Mix ½ finely chopped onion, 1 crushed garlic clove, a knob of butter, and spices in a microwaveable dish, before microwaving for 30-40 seconds. Mix in a drained tin of chopped tomatoes and kidney beans, plus ½ stock cube, and 2 squares dark chocolate. Cover and cook for 4 minutes, stirring occasionally.

Serve with rice, sour cream, and guacamole.

 

Butternut Squash or Mushroom Risotto

Risotto can be delicious – but standing over a hot stove and stirring constantly can be super time consuming. Instead, consider making a risotto in the microwave instead. You can easily customise with whatever ingredients you have to hand.

Sweet and Sour tofu with ‘Fried’ Rice

Skip the takeaway and make a quick and easy ‘fakeaway’ instead! To serve 4, mix 9 tbsp ketchup, 3 tbsp vinegar, 4 tbsp dark sugar, 2 crushed garlic cloves,  a pack of firm tofu , a roughly sliced white onion, and 2 chopped peppers in a microwaveable bowl. Microwave uncovered for 8-10 mins, before adding a drained 227g tin of pineapple, and microwaving again for 3-5 mins (or until the tofu is fully cooked).

Serve with microwave fried rice of your choice.

To make a biriyani in your microwave, mix together your chosen spices, rice, stock, and even sultanas if you fancy. You’ll be tucking into this speedy Indian classic in around 10 mins.
